Freezer Meals
With school and sports in full swing and harvest just around the corner, I'm all about making things ahead of time and putting them in the freezer. Then either the night before or when you need something in a pinch, just pop it in the oven and smile as you don't have the stress - or mess for a hot meal.

Peaches
Biting into a fresh peach with the mouthwatering juices running down your cheek is a definite summer/beginning of fall treat. With peaches in season you should try to use them in as many ways as possible. Just be sure to avoid bruised or wrinkled peaches and they should be firm to the touch but not hard. To help make them last longer, you can store them in the refrigerator for up to a week.

Bring the beach home
If you want to know one thing about me, it's that I love summer and the heat that comes with it and am not a fan at all of any cold weather. So as the weather is beginning to cool off, I am already longing for those steamy, hot days. And when I think of summer I associate the smells of coconut and pineapple so here's the theme for this week's column.

Tuh-MAY-toh or Tuh-MAH-to
Tuh-MAY-toh or Tuh-MAH-to - however you prounouce it they are definitely in season. And maybe it's just my garden but my tomatoes and peppers are progressing . . . just very slowly! I'm hoping they turn around soon as I'm getting anxious to can some salsa! Even though tomatoes are available throughout the year, there's nothing better than a fresh tomato right out of the garden.

Cucumbers
Last week I featured the easy-growing zucchini and this week is about the same kind of easy-growing vegetable - cucumbers. a cup of cucumber slices is nearly as thirst-quenching as a glass of water. Just thinking about cukes makes us feel cooler. Plus cucumbers are known for their ability to improve the complexion of skin and studies suggest that they can even help lower blood pressure.

Zucchini
Growing great zucchini is easy. Almost too easy. Once established in your garden it grows like a weed. When trying to decide what to feature in my column this week I remembered the large bag of zucchini in my refrigerator waiting to be prepared. Just remember to pick the zucchini young as it tastes better and contains less seeds.
